Paleo Turkish Delight Cheesecake Recipe

Paleo We Bar None Turkish Delight - Cheesecake

Ellen from We Bar None has shared this great recipe for a Turkish delight cheesecake using the We Bar None Turkish delight bars featured in this month primal box. Yum!

Ingredients:
1 cup Cashews - soaked in boiling water for 1-2 hours or in cold water overnight
40g Coconut oil (melted)
25g Maple syrup
15g Rosewater
1 tbsp lemon juice
1/2 teaspoon vanilla extract
2 We Bar None Turkish Delight bars

Method:
1. Drain your cashews and whizz up all the ingredients, apart from the bars, in a food processor.
2. Spoon your mixture over the We Bar None Turkish Delight bars and smooth with a knife.
3. Garnish with rose petals.
4. Set in the fridge for a minimum of 2 hours before serving.
 
The above recipe makes 2 mini cheesecakes which should serve 2 people each, or one really hungry person!
